Glassware: Collins glass
Garnish: Lemon thyme
Ingredients:
Pomelo skin
Segmented pomelo flesh
1 x Tbsp juniper berries
300ml Seedlip Garden 108
500g Raw sugar
1L water
Method:
Combine all ingredients and pasteurise. Once cooled, carbonate the mixture. Serve over ice and garnish with lemon thyme.
