Cape Byron Distillery’s co-founder and master distiller Jim McEwan was recently in Byron Bay to launch his new journey of distilling whisky with Eddie Brook, who is also a co-founder and distiller.
What makes their new make spirit a unique one is the way in which the whisky will be made. They have created a product similar to beer but without the inclusion of hops (know as a ‘wash’ in the industry).
Oak whisky casks from Tennessee and Kentucky that have already previously held American Whisky in them are now filled with the new spirit, giving it rich colour and flavour. After several years it will eventually become whisky.
Co-founder Jim McEwan has a lot of experience, with over 55 years in the distilling industry. He is also the only distiller in the world to win ‘Master Distiller of The Year’ three times. In 2014 he was given a Hall of Fame Lifetime Achievement Award.
Meaning this new spirit is going to be jam-packed a lot of wisdom and was distilled by one of the best in the industry.
