Inspired by the eccentric physician, Dr. Robben Fern, this Gin haven pays tribute to his love for the study of botanicals. This passion led to the opening of a Gin Parlour where patients’ ailments and stress were soothed with concoctions of fresh local herbs and botanicals paired with gins.
During the day, the venue is perfect for a business meeting or social gathering, where guests can indulge in organic tea and coffee options, sustainably sourced from various parts of Australia. Brands such as Providore Tea and T Totaler Tea are on offer here, while coffee here is brewed with Dimattina.
When day turns to night Dr. Fern’s Gin Parlour serves bespoke cocktails that are changed daily dependent on the organic ingredients sourced. The unique drinks are complimented with charcuterie and cheese plates, making it an ideal spot for an intimate night out.
Gerry Olino (ex- head bartender of the Island Shangri La’s Lobster Bar) heads up the bar team, with a back bar housing over 250 gins, including the sought after Blind Tiger gin. The bar team also has an innovative approach to making the classic Gin & Tonic – using a slim Collins glass, with the suggested gins stored in the freezer alongside the glassware to ensure a fresh and frosty drink, and ice is added last to prevent foaming.
Inside feels like a vintage apothecary, with custom wood drawers and vinyl DJ booth, the parlous is a welcoming environment, complete with customised lighting features. Whether it’s for a cup of tea or nightcap to conclude your evening, Dr. Fern’s Gin Parlour is the perfect backdrop.
