Singapore’s Mandarin Oriental has unveiled its latest drinking destination, MO BAR.
The bar is the result of an exclusive partnership between the hotel and multi-awarded bar developers, Proof & Company.
The interiors are inspired by the Pacific Ocean and the distinct cultures of Asia’s port cities. Exotic travel keepsakes, handcrafted wooden sculptures, deep-etched metal panels and hand-sewn tapestries adorn the space, highlighted by the floor-to-ceiling windows that provide sweeping views of the stunning Marina Bay.
Guests are encouraged to take a seat centre stage at the bespoke bar and watch as bar manager Michele Mariotti whips up a range of cocktails using the freshest ingredients and innovative techniques.
Mariotti has tended bar at some of Europe’s leading bars, and his 14 strong cocktail list reflects this wealth of practice and experience with flavour. Highlights include the ‘Coconut Beaches of Fiji’, made with pisco, lychee cordial and carbonated coconut cream; and the ‘Mother of Dragons’, a blend of strawberry aloe vera, red dragon fruit juice and cachaça.
Mocktails, beers and wine are also on offer, including the MO BAR Pilsner, crafted together with local craft brewery, Archipelago, uniquely for the bar.
Pair your drink with one of the gourmet light bites, such as the ‘Indo-China Prawns with Masala Mayo’, the ‘Singdog with Achar’ or the ‘Avocado’ dessert, filled with avocado mousse and Gula Melaka ice cream.
The bar will also be serving the hotel’s famous afternoon high tea, featuring artisan pastries, local delights and a range of tea leaf teas.
