Liquid & Larder directors James Bradey and Warren Burns have expanded their team with award-winning barman Calum Lawrie. Hailing from England, the British bartender has been appointed Group Bar Manager, first for the group.
Lawrie will oversee the groups array of successful venues including Grandma’s (Sydney), The Wild Rover (Surry Hills), Wilhelmina’s, (Balmain), Burgerhood (Balmain), and Sydney’s trail-blazing specialist steak restaurant, Bistecca (Sydney). The newly created role will have a strong focus on guest experience, beverage programs, venue theatrics and event management.
Lawie has a wealth of industry experience that spans from global positions in Sydney, London and Edinburgh, where he managed many successful bars that earnt him the title of UK Bartender of the Year in 2003. More recently, Lawrie launched a joint venture brand with DIAGEO called Copper Dog Blended Malt Whisky, where he globally headed up sales and marketing teams. He has also set up his own drinks agencies, Barnomadics and Panch.
Liquid & Larder, founded ten years ago by Bradey and Burns rebranded the business and have broadened their focus on bars, restaurants and soon, retail.
“We wanted a broader, more transferable brand identity before we moved into the new territories of restaurants and retail with Bistecca, which opened in July,” said Bradey.
Bistecca encompasses the new vision and features three distinct spaces, with a super smart bar, 50 seats Italian restaurant and opening shortly a wine store.
