After a reasonably quiet spell on the Hong Kong bar scene the last few months, a welcome new addition will soon open its doors.
Industry legends Sandeep Kumar (two-time India Bacardí Grand Prix National Champion and director of the beverage programmes at venues like China Tang and Howard’s Gourmet) and Joe Villanueva (ex-Lobster Bar & Grill and the first Hong Kong Chivas Master to compete in the global finals) are bringing the city’s drinkers The Wise King, a modern classic bar.
The venue is inspired by King Alfonso X of Castile and Leon, the Spanish 13th century king is said to have started the tradition of tapas – serving small plates of food with alcoholic drinks.
In line with this history, The Wise King will be serving up a number of small plates alongside a drinks menu of bespoke cocktails, wines, sparkling wine, champagnes and Spanish beers.
The cocktail offering ranges from classic mixes, such as the ‘Turrón Sour’ (HK$118) with notes of nougat and toasted almond and the ‘Monti-Tipple’ (HK$108) with Xeco Amontillado, Gin Mare, Café Vermouth and aromatic choco bitters, to barrel aged libations, including the Pacharán Manhattan’ (HK$98) with Woodford Rye Whiskey, Blackthorn liqueur and Abott’s bitters and the ‘Joya’ (HK$98) with Jodhpur gin, Pomace herbal brandy liqueur, Mancino Rosso and orange bitters.
The tapas on offer are all authentic Spanish dishes, such as scarpetta, patatas bravas, pollo kebab and varied Spanish charcuterie and cheese.
The Wise King’s décor is a definite nod to the opulence of the 13th century royals, with features such as plush leather chairs, crimson wallpaper with gold detailing and murals of the Spanish king.
The Wise King is set to open mid-July in Central.
