Flying Brick Cider Releases Rare Methode Champenoise Cider

Flying Brick Cider

Flying Brick Cider Co has released the special limited edition ‘Methode Champenoise’ (MC), an indulgent cider using select heritage cider apples and traditional fine sparkling wine methods.

Established in 2010, Flying Brick Cider is one of the fastest growing cider brands, best identified by its black stubbies. The brand’s current range includes the signature Original, Pear and Draught ciders.

For this edition, MC was been crafted with 100 percent heritage cider apples and milled with some pulp oxidation prior to separation over the rack and cloth press.

Describing the process, Flying Brick Cider maker Nyall Condon said the MC Cider was naturally settled and clarified, then left to cool ferment at length through to dryness. This was followed by a stage of malolactic fermentation before the cider was finally triaged to bottle for secondary fermentation and conditioning.

Condon said, “After more than six months lees time, the MC was then disgorged and dosaged back with the original apple juice for sweetening.

“The deep elegant colour heralds the ensuing weight and richness of this magnificent reserve cider. Complex and tannic, an abundance of traditional style convenes alongside creamy textures throughout, the result of maturing on fermentation lees.”

True to the brand, MC Cider contains no colours, sugars, concentrates or flavours. The result is a cider with rich and sweet fresh apple characters, a natural acid balance, soft elegant edges and a round palate.

Flying Brick Cider Co’s Methode Champenoise Cider is now available at RRP $40 per 750ml bottle.
