Edu Cardenio Zamora was one of 40 who entered the competition in Singapore. He was then selected from these submissions as one of the top three competitors in his city.
In the next round, he competed against 15 other bartenders. The Top three from the other competing cities, Singapore, Malaysia, Thailand, the Philippines and Vietnam.
His original cocktail ‘Mantener Lafe’ (which is Spanish for ‘keeping the faith’) focus heavily on utilising the ingredients in the most creative possible way and sustainability.
The cocktail features a roasted coconut cordial from coconut juice, lime, citric acid, sugar and reused coconut husks. He then combined it with Bacardi Carta Blanca, lime bitters, Angostura bitters and kaffir lime leaves served over ice in a coupe glass.
Edu once worked at a pool bar in the Philippines where he noticed guests would drink coconuts and then discard them. Which is what sparked the idea for the main ingredient in his original cocktail.
Through his cocktail, Edu wants to create awareness about different ways venues can practice sustainability and repurpose ingredients to develop new flavours rather than throwing them away.
