In an Australian first, premium tequila brand, Patrón Tequila and world-class restaurant group, Rockpool Dining Group, have come together to open a joint restaurant and bar.

Bar Patrón by Rockpool will be offering modern Mexican fare and a bespoke spirits and cocktail list curated by Patrón tequila.

Rockpool Dining Group’s culinary director, renowned chef Neil Perry, has crafted a menu of Mexican favourites, from small plates of empanadas, tamales, quesadillas and tacos, to larger plates of enchiladas and enmolada con pollo. Perry has harmonised Mexican flavours with quality Australian produce to create a menu full of fresh delights with that signature Central and South American spicy kick.

Patrón is the exclusive tequila on the drinks menu, and the bar will house the core range of Silver, Reposado and Añejo expressions, as well as the ultra-premium Roca Patrón and Gran Patrón collections. Bar Patrón will also be one of the few places in the world where guests can try the rare Patrón en Lalique Serie 1 and 2. With only 500 bottles of the Serie 1 and 299 bottles of the Serie 2 worldwide, this will be a unique experience.

The cocktail menu will include a signature margarita, which can be made from a variety of tequila grades, ranging from the Silver to Gran Patrón. There will also be a number of twists on classic Mexican cocktails, including the Paloma, Cantarito and the Ponche de Granada.

The wine list is Spanish and Hispanic-centric, featuring wines from across Spain, Portugal, Argentina, Chile and the United States. Australian wines and Champagne will also feature.

The interiors are a nod to the elegance of the sprawling Mexican haciendas mixed with the relaxed, breezy vibe of Caribbean and Creole bungalows. The predominately white palate is broken up with splashes of lush greenery and red and orange leather upholstery. Retro bronze and glass light fittings, as well as antique furnishings, are reminiscent of colonial style.

“The opportunity to collaborate with them on this very special new restaurant is a real honour, and we’re delighted to work together to present the authentic flavours of Mexican cuisine and our range of artisanal tequilas to Australians in this iconic setting overlooking Circular Quay,” said Patrón Spirits International AG’s global chief marketing officer, Lee Applbaum.

With incredible views of Circular Quay and Darling Harbour, Bar Patrón is set to be a destination for both tourists and locals alike.

Bar Patrón will officially open to the public from 5:30pm on Thursday 8th March.
