Four Pillars Gin has announced the release of a Sherry Cask Gin, the first new product added to the portfolio since 2016.
The new expression will join the brand’s barrel-aged programme encompassing the Chardonnay Barrel Gin (previously known as Barrel Aged Gin) and the Christmas Gin, which is aged in muscat barrels.
The Sherry Cask was aged using 42 ex-sherry barrels of varying ages from 15 to 25 years. These barrels were first filled more than a year ago, and this has resulted in an expression rich in colour and complex in flavour.
Hints of pine needles underpin notes of crushed coriander, whilst the residual character of the sherry casks has imbued the gin with deep cassia and star-anise flavours, reminiscent of dried fruits and nuts. The addition of small amounts of Amontillado Sherry has given the expression a lengthy finish and slight sweetness.
This gin was designed to sip neat over ice, or to use in a classic Tuxedo cocktail, with gin, sherry and orange bitters.
The seventh solera of the newly rebranded Chardonnay Barrel Gin is also coming out this month. Nine chardonnay barrels were used in the aging process, and this release was kept for a full year in barrel. This gin has flavours of ginger, spice and oaked sweetness, and is perfect over ice or with a drop of honey and a sprig of rosemary.
Both gins are priced at $80 (500ml) RRP and are available online at the Four Pillars website or at selected independent retailers.
