Lost Luau is your go-to destination where summer vibes and classic tropical cocktails are all part of the party. The Sydney CBD pop-up bar has collaborated with Burrow Bar duo Chau Tran and Bryce McDonough, and Sydney Rum Club’s Tom Bulmer, to create the ultimate endless Summer party.
Behind the stick, you will find rum and tiki fanatic, Tom Bulmer (ex MsG’s, ex Lobo Plantation) and a bar team with loads of banter. There will be an abundance of playful cocktails, pineapples, coconuts, and umbrellas – exactly what you’d expect on that tropical holiday.
On the food front, the kitchen will run late into the evening dishing up rustic Island bites. Joy Mou (ex-Eau de Vie/Monopole) has been appointed as the restaurant manager, and the kitchen will be taken over by the Island Boys from Marrickville’s Factory Theatre. The charismatic team will be headed by Chef Phil Spence, who are ecstatic to bring a Caribbean flavour to complement the tiki pop up menu.
Phil’s Jamaican heritage and training in London’s Michelin starred restaurants, as well as a stint as Luke Mangan’s sous chef, there is no doubt the menu will be oozing with flavour.
Lost Luau kicks on this Friday 1st December from 4pm.
